Apollo’s Garden

Not only is the center thriving, so is Apollo’s garden.  For those of you who don’t know, Apollo is the groundskeeper at the Eva Ruf Resource Center, a major gear in the functioning of this place day in and day out, and he’s also my hero, frequently rescueing me from cockroaches.

When he’s not busy working with students or in the computer lab, Apollo is tending to his very lush garden!  Currently he’s growing sugar cane, cabbages, tomatoes, eggplants and carrots.  We also have a lemon and a mangoe tree, both of which are bearing fruit this year!

Apollo’s garden means sustainability and plenty to eat for dinner!  I can only image what he would grow if we had more land… Wow!
